Unless you're going to be using a lot of multimedia applications and doing a lot of encoding, then you don't need the i7 860 because HyperThreading isn't too useful for gaming. Instead, get the i5 750 which should save you about 80 bucks.
Good choice on the Samsung F3's, but do you really need 4? Unless you intend to run a big RAID, that seems excessive. For the price of two, you could get a 60GB SSD boot drive which is great to have.
And I'd suggest getting a Cooler Master Hyper 212+ for your CPU heatsink. It's a great unit for the price, and you can add an extra 120mm fan to it for even better cooling.
