Frankly I'd go i5 unless you really want the extra PCI-E BW. I'll do up a full list later when I have more time.

What kind of FPS are you looking for
Are you willing to OC?
What games do you want to play, or will you play?
Dual video cards in the future?
Preferences towards AMD/Intel or ATI/Nvidia.

You're wrong, there is Core i7 s1156 and Core i7 s1336. The last one is the high-end socket with a high-end chipset, the X58. The first one is placed a bit lower than that, and lacks triple channel. Besides that they are pretty similar, execpt that the 860 will go faster because of the more aggressive turbo mode.
The difference between the i7 and i5 are pretty obvious. The i7 has hyperthreading and the i5 does not. Because the nehalem architecture is such a powerhouse, the hyperthreading can in real life apps make a difference of over 30%. At the very least that is worth the money to don't take the i5 but the s1156 i7.
Best bang for the buck. The s1156 i7 doesn't have the PCI-e bandwidth the S1336 i7 has, but this is due to the chipset (P55 vs X58).
