The white mounted unit is a General they are way too strong (I once had 350 men-at-arms vs 1 unit remeining out of the French kings royal guard and he killed 75 of my men before he finally ran away.

Also, are your units peasants? They have poor morale and a weak attack, I use men-at-arms or other armoured units as my main foot troops.
