Wow I've never had an Easy Sim dominate like that before! There is a real 'virtual' deck so everything still is on the luck of the draw but I've never had that much trouble killing 1 Simulant, maybe in challenge mode but not there.
I would say you just had a bad round, if you watch the video I posted on my website it shows a friend of mine playing against an Easy Sim and he beat it in 6 minutes with me asking him to kinda drag it out.
My suggestion would be to focus on getting zero cards and using the special cards to knock him out
