From what I know watching the movies...
She is the "phoenix" and when the professor found her as a child her powers were so great they needed to be contained to safeguard her surroundings. So using his powers he put a sort of mental block on her and over the years incrementally restored her former power so that she can learn how to control her own powers and herself.
At the end of the second movie she is presumed dead after the dam ruptures and she's engulfed in the water. A phoenix gets reborn after it dies, so that brings her back for the third movie.
Now I'm guessing, since the professor doesn't know she's alive he can't put that "mental block" on her power so she goes ballistic because of the sudden rush of her full power which she hasn't had the time or training to control.
You should know the rest of the story.
